Shortbread Cookie Tart with Caramel Bits for the Summer Picnic Party




I love blog parties, I always get to meet new blogs with great content and most of the time I end up making new bloggy friends.

I was invited by Haniela and Beth for a Summer Picnic Party along with other talented bloggers, so I decided to bring one of my favorite Picnic-take a long friendly treats- Shortbread Cookies.

Shortbread cookies are classic and super easy to make and transport. Consisting of three basic ingredients, which are commonly used in pretty much every household (flour, sugar, and butter) this cookies are ready to make in no time.
For the record, I called mine shortbread cookie tart because I bake them in a tart pan, which to me, make them look super cute and fancy. But this same recipe can be double and make in a regular cookie sheet and cut in squares or any shape you want.




  • Shortbread Cookie Tart with Caramel Bits

    2 cups all-purpose flour
    3/4 cup sifted confectioners' sugar
    1 teaspoon salt
    2 sticks unsalted butter at room temperature
    10 Caramel Candies cut in small pieces 


    .Start preheating oven to 300 degrees. 
    .Butter a 10" round tart pan with a detachable bottom and set aside.
    .Sift together flour and salt into a bowl and set aside.
    .Beat butter on medium speed until pale and fluffy, scraping down sides of the bowl with a rubber spatula. 
    .Add sugar gradually, beating between additions and continue to beat for around 2 minutes. 
    .Reduce speed to low, and add the flour.
    .Beat until just combined.
    .Press dough evenly into the tart pan and refrigerate until firm, about 15 min.
    .When the dough is firm, which will take around 15 minutes, get it out of the refrigerator and cut it in eighth lengthwise pieces.  ( you can always make the pieces smaller)
    .Take the caramel candy pieces and push them down into each piece of dough.
    .Using a fork, evenly pierce all over the dough.

    .Bake for 45 minutes, until shortbread is firm in center and light golden brown. Transfer the tart pan to a wire rack and  recut rectangles right away with a paring knife.
    .Let shortbread cookie tart cool completely in pan.
    .To remove shortbread cookie from tart pan, just place your hand under the tart pan and slowly push your hand upward lifting the pan bottom away from the sides of the pan.

    Place the "slice" of cookies on a container and go have fun at your picnic!!

    I thought I would swing by and let you know of the new things that are going on in our group (maybe you already know all of them, so I apologise if this is repetitive, I just want to make sure I include everyone!)
