How to make Cookie Lollies
Cookie lollies are not difficult to make, they just take a little extra time than making regular cookie cut outs.
To start, sprinkle parchment paper with flour and roll out the dough about 1/4 inch tick.
You want to make sure the cookie dough is tick enough to accommodate the cookie sticks.
Take whatever cookie cutter you are going to use and cut out the cookie
Take the cookie stick and place your fingers on top of the cookie and with a twisting movement back and forth twist the cookie stick into the cookie.
Put your hand over the cookie and flip it over by using the parchment paper.
Lay the cookie on the backside
This is what you are going to see, do not panic please!
Take a small piece of the cookie dough, rolled it into a sausage shape and flatten it. Lay the flatten small piece of dough over where the cookie stick is. Flip the cookie over again using the parchment paper
and transfer to the baking sheet.
Bake cookies until crisp but not dark, 12 to 14 minutes.
Let them cool on sheets on wire racks.
Put stiff icing in a pastry bag fitted with a #2 round tip and outline the cookie.
Flood the cookie with your thin icing and let it dry over night or for a couple of hours.
For the BLACK CATS... I wanted to use sanding sugar
Working with a few cookies at the time and using a small paint brush,
I brushed the outline area of the cookie with corn syrup.
I immediately sprinkle the cookies with sanding sugar.
Let stand 5 minutes and tap off excess sugar.
And here is the final cookie, very simple to make right?
For the GHOST COOKIE...I wanted to use sanding sugar too, but I didn't have any in white LOL. So I did something else.I mixed a little bit of pearl dust with a few drops of vodka.
Using my fingers, I flattened the circles and attach them to the cookies with a little water. I did the same for the eyes's "pupils" with back fondant and tip#2.
Using a small brush I painted the cookie.When pearlized powder is painted onto royal icing
it takes on a shimmering luster which can be striking on cookies.

I really like the metallic-like finish
For the ghost's eyes I just rolled fondant very thin and using tip #5 I cut out some circles. Using my fingers, I flattened the circles and attach them to the cookies with a little water. I did the same for the eyes's "pupils" with back fondant and tip#2.
