Milk Chocolate Cookies that you MUST bake!


I just spend the weekend running around and getting ready for Cami's birthday parties. One on Friday and one on Sunday at home, I am almost ready except that tonight I will be making pom poms and party favors tags. God. help. me. because it is my first time pretending that I know paper crafting.
To top things off I have a little bit of a cold, and being 7 months+ pregnant with a 93 degree weather is not helping my mood at all, I am just keeping a positive attitude. After a long nap yesterday afternoon, I woke up craving chocolate, plus I had in my pantry a big chunk of Callebaut  milk chocolate that I have been trying to use for the past few months  weeks. Baking in a such a hot and humid afternoon was definitely not an option for me, so today  Cami woke me up pretty early and I had the perfect excuse to bake a batch of cookies before coming to work.

This cookie recipe is from Martha Steward Cookie Book, very simple and easy to make,besides the Callebaut chocolate makes them extra special and tasty. 

 INGREDIENTS


1 cup all-purpose flour
1/2 cup unsweetened Dutch-process cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
8 ounces Callebaut milk chocolate (4 ounces chopped and 4 ounces cut into 1/4-inch chunks)
1 stick unsalted butter
1 1/2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract




- Preheat oven to 325 degrees and whisk together flour, cocoa powder, baking soda, and salt in a medium bowl; set aside.
-Melt coarsely chopped chocolate with the butter in a small heatproof bowl set over a pan of simmering water.
-Transfer chocolate mixture to the bowl of an electric mixer fitted with the paddle attachment. Add sugar, eggs, and vanilla; mix on medium speed until combined.
- Reduce speed to low; gradually mix in flour mixture.
- Fold in chocolate chunks.
-Scoop batter using a 1 1/2-inch ice cream scoop; place 2 inches apart on parchment-lined baking sheets. --Bake for 15 minutes until cookies are flat and surfaces begin to crack.( Be careful and do not over bake them, the cookies will look a little soft when you get them out of the oven)

Transfer cookies to wire racks and let them cool .

Bring some cookies to work and coworkers will love you forever, even if you are hormonal  and cranky 9 hours a day!

    Your cookies look wonderful. This is actually the 2nd time this week I've seen this exact recipe - both you and the other blog praised the cookies, so I guess they have to go on my must bake list ;).
