Lemony Sugar Cookies

When I was growing up, back in my home town we had a lemon tree in our backyard, we had lemons literally 365 days a year, big and full of juice. Lemonade was pretty much our only daily drink and my mom used to make lemon jam, lemon jello, cookies and pretty much used lemons in anything she will get  her hands on, from salads,chicken soup to vegetables.

I found delicious fresh and juicy lemons at the grocery store and I made cookies. Today is one of those days were I miss everyone back home.

These cookies are soft, sugary and full of flavor. Perfect for a summer picnic or a late afternoon snack. Super easy to make.


Lemony Sugar Cookies

3 cups all purpose flour
1/4 tsp salt
1 tsp baking soda
1/3 of a cup light brown sugar
1 1/2 granulated sugar
2 tablespoons of fresh lemon zest
2 sticks of butter
2 eggs
2 tablespoons of fresh lemon juice
sanding sugar optional

    -Preheat oven to 350 degrees.
    -Mix flour, baking soda and salt in a bowl and set aside.
    -Using an electric mixer, mix sugar and lemon zest on medium speed for 1 minute, add butter and mix until pale and fluffy.
    -Add eggs one at the time.
    -Reduce speed to low and gradually add the flour mixture and the lemon juice.
    -Mix until just combined. 


    -Using a small ice cream scoop, scoop dough into baking sheet 2 inches apart.
    -Flatten cookies slightly using a spatula.
    -Sprinkle the tops with sanding sugar ( optional)

    -Bake cookies for 15 minutes until the edges are golden brown.
    -Let cookies cool on a wire racks or eat them just warm.
