Coconut and Chocolate Patties


These could be the simplest no bake cookies to make in your kitchen.They are perfect to make when we are short of time, but still craving something sweet and homemade. I absolutely love coconut, but I know people have "certain" relationship with coconut. Either they love it or hate it, not my case.
I used a small cookie scoop to get a uniform size on my cookies and make them look more like a little ball .



Coconut and Chocolate Patties
Recipe adapted from Martha Stewart Website 
Ingredients


3 cups sweetened shredded coconut
4 drops pure almond extract
7 ounces semisweet chocolate, melted




Preheat oven to 350 degrees.
Line a baking sheet with parchment paper and spread the coconut in a single layer


Place in the oven until the coconut is golden and toasted.This happens pretty fast, around 8 minutes or so, I would recommend keeping an eye on it and also stirring occasionally to color the coconut evenly.
Remove from the oven and let cool completely.



Melt the chocolate
In a medium bowl, combine toasted coconut, almond extract, and melted chocolate.

Gently stir until the chocolate and coconut is combined.




Using a cookie scoop drop a ball of the mixture off into a parchment lined baking sheet. Repeat with remaining mixture.
Place in the refrigerator until cookies are set.
