Lemony Sugar Cookies

When I was growing up, back in my home town we had a lemon tree in our backyard, we had lemons literally 365 days a year, big and full of juice. Lemonade was pretty much our only daily drink and my mom used to make lemon jam, lemon jello, cookies and pretty much used lemons in anything she will get  her hands on, from salads, chicken soup to vegetables.

I found delicious fresh and juicy lemons at the grocery store and I made cookies. Today is one of those days were I miss everyone back home.

These cookies are soft, sugary and full of flavor. Perfect for a summer picnic or a late afternoon snack. Super easy to make.
