For the dark chocolate lovers or for people like me, who leave everything to the last minute. I baked these cookies last night to bring to Cami's school today for some of the teachers . They were so easy to make, no rolling or cutting involve.They were also yummy, of course, they come from the fabulous Cookie Bible Martha Stewart Cookie Book.
Grammy's Chocolate Cookies
Martha Stewart's Cookie Book
Makes about 3 dozen
- 2 cups plus 2 tables spoons of all-purpose flour
- 3/4 cup unsweetened Dutch cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 sticks plus 4 tablespoons unsalted butter, room temperature
- 2 cups sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- Sanding Sugar for rolling
DIRECTIONS
.Sift together flour, cocoa powder, baking soda, and salt. Set aside.
.In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium speed until light and fluffy, about 2 minutes. Add vanilla and eggs and mix to combine. Reduce speed to low, and gradually add dry ingredients,beat to combine. Cover bowl with plastic wrap, and chill until dough is firm, about 1 hour.
.Preheat the oven to 350 degrees. Line baking sheets with parchment paper. Roll dough into 1 1/4 inch balls. Roll each ball into sanding sugar. Place on baking sheets about 1 1/2 inches apart. Bake until set, about 10 minutes. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Wrap them in a pretty box or clear plastic bag, tie them with a ribbon... and you will be loved forever.
