4th of July Cookies

Happy Friday!!

I couldn't wait for this day to arrive. School is finally over, no more school lunches to make and run around in the morning getting the kids ready.  Of course, this doesn't mean that I can sleep an extra hour, sleep is not one of those luxuries that I have.

Any way, 4th of July is next Thursday and I couldn't pass the opportunity to make some red, white and blue cookies. Today I am using 2 news cookie cutters from The Cookie Cutter Company

To decorate this cookies you will need the following:

.bottle rocket fireworks cookie cutter
.5" plaque cookie cutter
.piping and flood consistency royal icing in americolor white, red and blue
.Americolor food writers
.tips #1 and #2
.pastry bags and couplers
.sanding sugar in blue and red
.kopykake projector ( this is totally optional, I am having way too much fun using mine)

-Outline the cookies with blue royal icing and tip #2.
-Flood the cookies section by section giving each one some time to set between additions.First the blue, then the red and let the cookies dry completely.
-Outline the cookies again with blue icing consistency and pour sugar directly onto the wet border.
-Let the sugar set on the icing for a few minutes and then dump off the excess sugar. You can also use a clean dry paintbrush to move any sugar that might have been left behind.

-Outline and flood the cookie, let it dry completely before the next step.


-Prepare the image you want to use and print it trying to get the image as close to the actual size as the plaque cutter as possible.


-Project the image in the cookie.


Outline with blue piping icing or whatever colors you want. Outline and flood the 4th ( I am not really good at piping, sometimes I just use food markers first and then pipe over the icing )



-Let the icing dry completely, now flood the red part of the image, since the red part of the letters is very small I used flood icing consistency and a pastry bag with tip #2 instead of a squeeze bottle. Let it dry    
-Pipe the border with red and pour the red sanding sugar directly onto the wet border, let it set for a few minutes and dump off the excess sugar.




Using a kopykake projector make cookie decorating funner and the possibilities are endless.

Mini Tea Party cake, cookies and cupcakes


This little tea theme cake is only 4", I made it for the top of a cupcakes tower I create it for a friend's little girl birthday party.


The cupcakes were chocolate with vanilla buttercream.
I made lots of mini cupcakes toppers in shapes of cupcakes and mini cakes, I loved how they turned out, so tiny and cute.

  Of course, cookie favors are a must in every party.


 Simple tea cups, cupcakes and tea pots were perfect for the children to take home.

Abby Cadabby Cookies


With 2 kids, a full time job and baking on the side, life certainly has been very busy around here. The weatherr has been wonderful this week and we are taking full advantage of it. The kids and I go for long walks every day after work, even my poor Lucas is happy the I am taking him out more often. He has gained so much weight that he certainly need it.

This week I took sometime off away from cakes, it feels great. I can't lie.
However cookies have taken over and is ok with me because I have gotten to play with my beloved kopykake more.

These Abby Cadabby cookies were definitely a labor of love, very time consuming as they needed to be made in layers. It is my first time making them, of course, there is room for improvement but so far I am pretty happy with the results.

Pirate Ship Cake and Cookies

 I created this cake a few months ago for a really good client of mine.I have made a lot of cakes for her children the past few years and she is a pleasure to work with always leaving me free will in terms of cake design.

Her daughter was celebrating her birthday with a Pirate theme. I made a small cake since the party wasn't too big, a clean design and pirate theme details made using cookie cutters cut outs.
My idea of a map, I made it with Wilton fondant and black royal icing for the writing.


Of course, cookie favors are a must in parties these days.
I created 2 different designs using the same colors as the cake, black, red and white.

Pink Chanel Purse and Make up Cake


I am not 10 years old and I would totally love getting this pink
Chanel purse and make up cake on my birthday.
Who doesn't love pink, designer purses and make up?

Nothing original in this design from my part. My client provided me with a picture of the cake she wanted for her daughter. I just Google the picture to find the original cake designer and there are hundreds, if no thousands of this cake design online.



I had problems accomplishing the color requested,thanks to Callye, aca Sugar Belle for providing me with emails, instructions and pictures to get this color right. Hugs girl!! you are the smartest cookie I know!


Making the cake itself didn't take too long, it was a matter of carving, crumb coating with buttercream, letting the cake cool in the freezer and then covering the cake with fondant.

I had little issues with the fondant because it was a very humid day, nothing that some good confectioners sugar can't fix.

All the make up is handmade by me using Wilton fondant, which is great for modeling.

Caramel Macchiato Cream infused into whipped cream and dulce de leche with roasted almonds- Topping.




Are you in the mood for a yummy and super easy to make topping? what about using an unexpected ingredient to make the topping unique and full of flavour?
Well this is what I have for you today....
Caramel Macchiato Cream infused into whipped cream and dulce de leche with roasted almonds topping.


Sweet cream has always been a favorite of mine and this time I tried adding a few teaspoons of my favorite International Delight Caramel Macchito Cream in this topping and I loved the resulst!

The super easy recipe:
For the whipped cream:
-1 cup of heavy cream
-1 tablespoon of confectioners sugar
-1 teaspoon of Caramel Macchiato International Delight Cream
Using a whisk, begin whipping the cold cream with wide strokes, which will get more air into the cream and help fluff it up faster. When the cream starts to thicken,add sugar and the caramel macchiato cream .Continue beating the mixture until soft peaks form.
Set aside

In a small bowl mix one teaspoon of the macchiato cream and 2 tablespoons of dulce de leche ( you can find it at most groceries stores in the Hispanic food aisle)


Mix until the mixture becomes pourable

Now set up a yummy treat. We are ice cream lovers at home, so that's what I used, but this topping will be delicious with fresh fruit, brownies and even cake!


Layer 2 scoops of ice cream, a few banana slices, 1 teaspoon of the dulce de leche mix and roasted almonds in a jar.Keep layering until the jar is almost full.

Top the jar with 1/2 cup of the whipped cream that you previously made, the dulce de leche and roasted almonds.
