Wedding Cake Cookie Favors

We have been hit with another snowstorm in New Jersey, what's new? My office closed and I had to stay home for 2 days because it was very dangerous to drive like that.(paid snow day-I like that-don't tell my boss). There are days when I get out of bed and asked myself, what am I doing here? while most of my friends in Costa Rica are getting tan any moment they get or having BBQ parties on the weekends. Then, I remember why I am here..husband,baby,dog,school, good job and the opportunity to accomplish many dreams. Never mind the cold, I will deal with it!

This weekend I was given the opportunity to be part of a Bridal event in Princeton, I was ask to make traditional white cookie favors in different styles using chocolate cookies instead of  traditional sugar cookies..Here are the first ones I made, I hope you like them.

Dinosaur Cake

I have to say that I have never loved dinosaurs as much as I do now. A Dinosaur with a pink bow was the only requirement my client wanted, then I was pretty much able to do what ever I wanted. I love when clients get you freedom, they always get more than what they ask for. I made the dinosaur cake topper using fondant, for the number 3 I used gum paste.

On Mother's Day last year my husband gave me the Cricut Cake and I always try to use it as much as I can. ( by the way we got it on sale, since I refused to pay full price) I have the basic birthday cartridge and I was able to get the dinosaurs cut outs from there, but there are also really cute dinosaurs cookie cutters that would do the job.

             I think it is important to make your cakes look as good in the back as they look in the front.

Using small gum paste cutters I made the little flowers and the butterflies. I also used a mold for the "palm tree" leaves.

Fondant vs Gum paste

Some people have asked me what's the difference between fondant and gum paste and how to use it when it comes to cake decorating. I thought a would give a quick in sight of the difference between  fondant and gum paste.

FONDANT:

It is a dough-like paste extremely versatile.It can be rolled out and used to cover cakes, cupcakes and sometimes cookies. The basic ingredient for fondant is confectioners sugar with the addition of gelatin, corn syrup and glycerine to provide a malleable sweet paste.
Fondant gives the cake a beautiful porcelain look surface that can be painted, piped, stamped and quilted. White fondant can  be tinted in any color you want or fondant can be purchase in many colors and comes in vanilla, -the most popular- and also chocolate flavour.There are many recipes on the web if you want to make your own fondant. I personally buy fondant online by the tub because I buy big quantities. The only fondant I would make from scratch is marshmallow fondant, which I don't use often.

You can use fondant to make:
  •  some sugar decorations
  • cutouts
  • plaques
  • frills
  • impressed patterns
  • little flowers
  • cupcakes toppers
I love fondant because I have more flexibility in incorporating a design onto a cake...and I am really bad working with buttercream

GUM PASTE:

It is used primarily for hand modeling figures and can be rolled very thin for petal flowers, leaves and very detailed decorations.It is similar in texture to fondant but it dries very hard, gum paste is an edible product and taste very bland, but I do not recommend eating it. First, why would you eat a doll,or a shoe? then you can loose a tooth in the way! I think it is worth to tell you that you do not cover a cake with gum paste.

You can use gum paste to make :
  • flowers
  • 3 D figures
  • bows
  • cake toppers
  • straps for hand bags
  • belt buckles
  • shoes

Sometimes I use 50% percent gum paste and 50% fondant when I make certain details or decorations on a cake. Why do I do that? maybe I do not have enough gum paste or I really do not want what ever decoration I'm doing to dry too hard.

STORING GUM PASTE AND FONDANT:
Fondant and gum paste can dry very quickly. When you are working in a project using them always keep them tightly wrapped in a plastic wrap.
Store at room temperature in an airtight container away from heat and humidity.
Never get them wet because they will become very sticky to handle.

A few Tips that works for me:

-If I 'm working with a small amount of gum paste or fondant on a cake, I like to cover it with a big coffee mug instead of the plastic wrap, because is easier for me to go back and for using it.
-When I'm making flowers I like to make a lot of petals at one time but I do not what my petals to dry,  I roll out the gum paste, cut the petals and cover them with plastic wrap and place a damp cloth on top of the plastic.Then I can work with one petal at the time.
-When I'm kneading fordant or gum paste I always use shortening.

Mermaid Cake

If my daughter liked dolls or Princess I would love to make this cake for her,but my little girl is not into Princess or dolls. She is only 3 years old, so I think I still have hope or
I might end up making the cake for myself at my birthday ( and then people would really think that my brain is being affected by my age)

I made this cake for a very special little girl who was turning 4 years old yesterday.
She loves Ariel and her dream was having a mermaid cake at her party.

I am thinking about Cookies and Ice Cream



Around here we are getting a lot of snow tomorrow and these cookies might not be the best snack for this winter weather( I would rather go with hot chocolate and macaroni and cheese, yes a weird combination)
I couldn't help myself and I am feeling very thankful today for the wonderful woman behind some blogs who take time to make tutorials and teach us how to decorate cookies...for free!

Burberry Tote Bag Cake tutorial for Frosting for the Cause

BURBERRY HANDBAG CAKE

Any fashionista will love this cake.Trying to make a purse cake is always difficult because the client is always expecting a replica of the purse they one. I always tell my clients that I am going to make in cake an interpretation of the purse, of course, trying to make it as close as possible to the real one. If you are going to make a purse cake I always recommend, if it is possible, to have the real purse. If your client is not able to provide the purse go online and get as many pictures as you can from the purse in different angles.

Materials:

Cake and frosting
3 pounds of black  gumpaste
2 pounds of white gumpaste
6 pounds Ivory fondant
1/2 pound of red fondant
Shortening to use when you work with the fondant
Confectioners sugar for rolling out fondant
Large and small Rolling pin
Plastic mat
Pear luster dust ( if you want to dust details on the cake)
Silver luster dust ( to paint the zipper)
Vodka ( not for you!!! to mix with the silver dust )
2 Cake boards (one to cut a template and other to assemble the cake)
Adjustable multi wheel pastry cutter (optional)
Zipper mold (optional)
Paring knife
Stitching tool
Small paint brush
Fondant smoothers
Small scissors
Tape measure


The buckle:

-Make it 2 weeks before the cake is due
-I used gumpaste,which is a sugar paste in terms of texture but dries as hard as porcelain.Do not substitute fondant for gumpaste, you need the gumpaste to ensure that the details will dry and not crack.
-I hand made flat sausages shapes and 2 flat circles to form the shape of the buckle, I let them dry overnight and then I attached them with a dab of water.
-I let them dry over night again and using silver luster dust mixed with a little bit of Vodka I painted them.
I gave them 2 coats of paint, but once is enough. Then you put the buckle aside  and do not touch it until is completely dry, other wise you will get your finger prints on it.

Making part of the purse's handle ( 2 weeks before cake is due):

1-Since I had the real purse with me I was able to make a mold for the detail of the handle.
2-On a plastic mat  greased with shortening (I do not use confectioners sugar with dark colors) roll out black gumpaste to 1/2 inch thick. Using the pairing knife cut the shape of the mold.
3,4-With the stitching tool or a toothpick make stitch marks along the sides.I did it in both sides.
5- Using a pairing knife make 2 thick cuts in each side ( you are going to need room to insert the long handle there)
6-Put the piece of the handle on top of a piece of paper towel and let it dry for at least 3 days. The side curl in will be in the front when you insert the long handle, you will be doing that when the cake is pretty much done.

The cake:

- Using a cake board I made a template of the cake size and shape that I wanted.
-Bake your favorite cake recipe on a cake sheet pan
-Make the buttercream.
-Place the template on top of your cake and using a sharp knife cut around it.
-Place the shape cake on the cake board template using a little buttercream as "glue" and fill the layers with buttercream. ( I made mine 3 layers of cake and 2 layers of buttercream). At this point crumb coat the cake and put it in the refrigerator. Wait 30 minutes, get the cake out and ice the cake nice and smooth and  put it back in the refrigerator.
-Use a tape measure for measuring the curved surfaces of the cake.
-It is very important to make sure your cake is smooth and cold before you cover it with the fondant.

Covering the cake in fondant:

-Put the cake on a bigger cake board and attach it using royal icing
-I like to brush my cakes with a little syrup to help the fondant stick to it.
-If you have to color white fondant use a toothpick to add a tiny dab of Ivory paste coloring directly to it. Start with a small amount of color and knead the fondant until the coloring is completely worked through, add more color if you need until you get the color you want.
-Dust your work surface with confectioners sugar and roll the fondant until is about 1/8 inch thick, make sure the fondant is larger than the total cake measurement.
-Pick up the fondant by rolling it onto the rolling pin and cover the cake. Run the fondant smoothers over the top of the cake to make sure there are no air bubbles and secure the edges along the sides of the cake.

To make the plaid on the cake:

The best way to make the plaid on the cake is using a multi wheel pastry cutter, I got mine at NY Cake  at a very good price and I love it. You can always use a ruler to cut the stripes (I used to do that )but it is very time consuming.
-Get the black, red and white fondant ready, I used the soup cups to cover the fondant so it doesn't get dry while I am working with different colors at the same time.
-I made all the stripes for the plaid at the same time, I cover them with plastic wrap ( to avoid drying)

-I kept the real purse close to me when I started making the plaid design, you also can use pictures from different angles of the purse. The idea is to make the plaid as close as the real one as possible.

Making the details of the cake:

- For the zipper I used a mold and cut a 2 inch wide long strip (as long as the handbag) and attached it with a dab of water to the cake.I painted the zipper with silver luster dust mixed with vodka to create a metallic look.If you do not have a mold, just use the stitching tool to make the zipper detail.

-Measure the sides of the cake to determinate the size of the handle that you are going to need.
-Cut the long strip ( handle), make the stitching details and attach to the sides of the cake with a dab of water. Remember that you have to assemble the front of the handle with the piece that you previously made and also attach the buckle to the 'other side" of  the handle..
Look at the pictures of the real purse or the purse itself and make any other details that you might need.
-To make the tag I used a tag cookie cutter. I piped the letters with royal icing
-Take what ever is left of the ivory fondant and roll it as thin as you can and cover  the board around the cake.
-At the end, using a glue gun you can add ribbon around the cake board.

Now go and take a Tylenol, at this point you will feel like your back is breaking in pieces!

Pink Lady Bug Baby Shower Cake


Hi everyone, I hope you guys are having a good week.  Around here is being hard to go back to a routine after having a week off.On Monday I got my little girl up early to get her ready for the Day Care, she said- Mommy I don't want to go to school, can we go to the Mall instead?.
I think is kind of hard to get into work/school mode after the holidays, but hey... it's a new year and we have to start with the right foot. And no, I won't be in the Mall any time soon!

This cake was designed using the Baby Shower invitation as an inspiration.I made the ladybug with rice crispy treats.The dragonflies are made with 50% gumpaste, 50% fondant using hot pink and  light green colors.

Martini Fashionista Cake

HAPPY NEW YEAR!

I am so excited to start this year, I know it will be full of blessings for me and all of you too. I have a lot of projects coming my way personal and professional, I am quite excited.

What do you think of my new header? my friend Jessica of The Frilly Coconut was so nice to put up with me and my never ending indecision and made the header  just the way I had imagine. I want to pay it forward and I am planning on posting more cake decorating stuff for you to learn, I have learned so much from other bloggers that I would like to share the  little I know about cakes with you. Any ideas and suggestions are always welcome!  A lot of stuff is still under construction, (I guess being a couch potato over the holidays didn't give me enough time to work on it :) but new post will be up soon.

Well, let's move into this cake. I called it the Martini fashionista cake, I made it for a 40th birthday party. My client saw a picture of one of the cakes from Pink Cake Box and all the inspiration was taken from them.

I used cookie cutters to make the purse and the shoe. I painted the silver polka dots with silver luster dust. I didn't have a cutter for the martini glasses so I copied some martini glasses pictures from the Internet and made a template with the size that I need it and then rolled a piece of black fondant and using a sharp knife  cut the glasses.
