Happy New Year!!!

I found myself too whiny this year. Besides the standard --always being tired, I feel that I complained too much and always expected and wanted more of everything.

So for the next year I will not be making my never ending list of goals, I will be living everyday day to the fullest and making the best of what I have in front of me.

What are your goals?

Happy New Year, I thank each of you for stopping by, supporting my little blog and sometimes reading my nonsense.

Just a few things...

Yes, as you can see I am the crazy lady who puts her Christmas decorations up on November.
That truth is that I love Christmas, and now with my kids growing up, loving Santa, the lights, the music and our movie nights with hot chocolate I want to enjoy it as long as I can.

I know people think that November is too early for a Christmas tree, but the joy I get decorating this tree with my little one is too much to have to wait for a few more weeks.

See, I like to get things done early.  I even took my little ones already for their annual Christmas picture, I saw a sale at my local Photo studio that I just simply couldn't pass.
Little hands keep moving around our ornaments.

Even this little guy already is around the house doing his thing.
This year is the first time that we have our own Elf.

We named him William and my kids are going nuts over him. Here is Willie playing with my Sprinkles.

Since this month I haven't been baking a lot, I have spent some time organizing my tools and baking supplies, I do take some much joy doing that. It is just the little things right?

A little pic of my cuties, we are already crafting away for more Christmas decorations.

I am wondering if I am the only one who likes to put all holiday stuff up early?
When do you start decorating for Christmas?

Graduation cake-We did it!!

We did it!
and no, it wasn't us graduating from Pre K, it was our little Camilla.
Last Friday  was her graduation and we were beyond excited, I was nervous making sure she knew all her lines for the songs and poems of the ceremony.
At the end, we had such a good time and everything went really well.
I made a little cake for her classroom snack time, my first time making the "ruffle cake".
Not that bad but I definitely need more practice.

Proud mama!

If you don't mind me sharing, here are some pic of the day.

Have a wonderful week everyone.

Why should I have birthday candles in my house?

After  the past few weeks making...
Chocolate cupcakes with Vanilla Frosting
Vanilla Buttermilk cake with strawberry mousse and chocolate frostingChocolate cupcakes with cream cheese and chocolate frosting

Banana cupcakes with peanut butter frosting plus 50 cookies and 3 more cakes...
The only thing I really wanted to do on Sunday was seeing my little girl blowing bubbles. My husband in the other hand wanted a little birthday party for me. See, I don't really like his idea of "party", it usually means that I cook, I do the shopping, I do the cleaning before and after. ( all of this because I think I am the only one who can do it right), but not this time. he did everything himself. And then the question comes...do I make my own birthday cake? and the answer is NO! I don't really want to bake more and I don't want to eat cake.
So my wonderful husband said that a birthday without a cake is not a birthday, which I totally agree, he went and got me and ice cream cake from Cold Stone.
And then, we have to sing.... oh but wait... he looks at me and ask me where are the birthday candles? What? I do not have birthday candles in the house. Why should I have birthday candles in the house? oh, someone said:  you make cakes and you don't have candles! yes, I do make cakes but it doesn't mean that I have to have candles or forks or plates for my clients/ family in my house all the time. Plus it is my birthday, I am not the one who has to worry about having candles in the house. As you can see, he is very creative!
I have to say that the cake was really good, we all love it and my husband did everything  by himself

Everything But Cake...

This precious little girl is turning 2 next week!! I can't believe it, time goes by so fast.

My tiny apartment can't hold any more decorations, I don't even know where to put them.
For this past 2 weeks I have been working on Camilla's birthday party. I will have a little one at my house with a Dora theme and one at her Day Care with and Elmo theme, so I get to make 2 cakes, how exciting! But let me tell you I am already exhausted. I don't know what is going on, maybe the bad weather here in NJ with heavy thunderstorms is making me so tired, I feel that between work, home, and few classes I don't have any energy. But oh, well, I am going to stop complaining and show you a few pics of my gumpaste decorations.
First time making these trees, I used a pretzel stick and some leaves, very simple.

Auxilio, here is my table. In the back is my new cupcake tower that I got on EBay very cheap, I am still debating between cupcakes or a big cake of Dora, what do you think?

Here is my own version of "Map" and "Boots", if I make cupcakes I will use them as toppers for the kids cupcakes.

And this is Boots, I made it using gumpaste, it is not perfect but is as close as I could get using this sample.

And ladies, here is my nightmare!!!! this little tiny Dora took me like 2 hours, I couldn't believe it, but I found it so hard to make.

Here I am letting her dry.... by the time I was done with Dora I had the worst headache, I went to bed not really happy about how Dora turn out, I think if you make a character like this you have to make it as close to the character as you can or just don't make it at all. I learned the hard way, Dora didn't look like Dora and the next morning her head fell off. So I had to do something else, I will show you in my next post.

Well girls, I hope you are doing great, I can see you have been busy cooking and baking.
Hugs,
Kathia

Lazy Days Of Summer

Hi everyone, I hope you had a nice long weekend. Did you eat a lot? I am asking you this because that's what I did all weekend long, some how I found myself hungry all the time. My weekend was pretty nice, my husband had off, believe it or not, so we hang out with his family a little bit and we also spend some time by ourselves with the baby and her little pool. I still remember seeing her last year in her little tiny baby pool, she wasn't even walking so would have to hold her, she was afraid of the water. And just look at her now!! she had such a wonderful time coming in and out of the pool playing with her toys. I feel so bless and I am sure you do too with your own kids.

Here is Cami with her little cousin playing. ( they had a little fight for the balloons, here they look calm)

Yummy corn , I just like to boil it with salt!!

And this is how my husband and his family eat it.... the sauce that you are looking is so spicy that my stomach hurt just seeing it. I don't eat my corn like that .

And this guacamole....totally Mexican was so spicy that my husband couldn't eat it.

Well, I hope you like my weekend pics. I have some excited news to share with you soon.

My big 35

These last few days have been very busy for me, Monday, my actual birthday day was a nightmare running around at work. The company that I work for merged with another office this week, so just think about phone issues, fax issues, printers, auxilio!! to much to handle for a newly 35 year old costarrican girl. OK, I will stop complaining now. On Sunday I had a BBQ in my apartment, nothing too crazy, just family and a few friends. We enjoyed a beautiful sunny day . Here is Cami with her friend Zolie, this adorable little boy is the son of my good and talented friend Tina, check out her blog at http://www.indigowings2008.blogspot.com/, she makes the most beautiful cards ever and gave me as a present a set of cards with my blog name hand written and stamp by her. Here is me cutting the cake with my future assistant. I just hope that by the time she becomes my assistant she won't be the one holding me.
Food..yummy!! A week before I had asked the famous Cooking Photographer for help regarding my side dishes, I am not a good cook, so I need it something simple, easy and delicious. God answered my prayers and so did Laura, who send me the most detailed email with tons of overwhelming ideas. This was a cold caprese pasta salad. Laura rewrote the recipe in her blog, but this recipe idea belongs to Patricia from Butter Yum. You can see recipe and of course, better pictures here:
http://butteryum.blogspot.com/2009/04/caprese-pasta-salad-basil-tomato.html
http://www.thecookingphotographer.com/2009/05/caprese-pasta-salad.html

This delicious pasta was a hit!! And I am very PROUD TO SAY that I have been the first one to make it, after Laura of course. Laura told me that she created this recipe for a competition, it is very original and it has the best flavor ever, bacon, cream, Parmesan cheese..heaven!. I followed the recipe every step of the way and it was well worth it. Here is the link, so you can tried too. See, I am good sharing, something that Camilla needs to star learning pretty soon.
